Ingredients:
1 1/2 cups rolled oats
1/2 cup mixed nuts (e.g., almonds, walnuts, pecans), finely crushed
1/4 cup seeds (e.g., chia seeds, flaxseeds, sunflower seeds)
1/2 cup dried fruit (e.g., cranberries, raisins, chopped apricots)
1/3 cup of 100MGO or 263+MGO manuka honey
1/4 cup almond butter (or any nut/seed butter)
1 teaspoon vanilla extract
1/4 teaspoon cinnamon (optional)
A pinch of salt
Recipe:
In a large mixing bowl, combine the oats, nuts, seeds, and dried fruit. Stir to mix these dry ingredients evenly.
Gently warm the almond butter until smooth and runny. Once slightly cooled, but still warm runny, add and stir in the Manuka honey, vanilla extract, cinnamon, and salt until well combined. The trick here is to ensure these blend without the butter being so hot as to degrade the Manuka properties (anything under 120 degrees FH is fine).
Pour the honey and almond butter mixture over the dry ingredients. Stir thoroughly until all the oats and nuts are coated.
Use a spoon to scoop out small portions and press them into bite-sized clusters. Place them on a parchment-lined baking sheet.
Refrigerate the clusters for 1-2 hours until firm then enjoy!
Store the granola clusters in an airtight container in the refrigerator.
